Homemade Sauerkraut

Organic cabbage 2 heads approx 3.5lbs
Sea salt 1.5 Tablespoons

Optional:
Carrots, onions, garlic or herbs of choice.

I buy organic cabbage, take off outer leaves and core it.  I shred it in my food processor or you can grate it or just cut it up into small pieces. Using only sea salt.  Celtic or Himalayan. Put it in a large bowl and sprinkle the sea salt and stir well.  The salt will break down the cabbage and get very watery.  You need to smash it, squeeze it with hands until very wet.

Once your ferment is the way you want it (tastes the way you like) then replace the airlock lids with the regular lid to seal it and store in the refrigerator.

Body Butter



1/2 cup coconut oil
1/4 cup olive or avocado or sesame oil
1 3/4 cup shea butter or cocoa butter
Melt above ingredients in double broiler or glass jar in saucepan of water over heat until completely melted.  Cool in the frig until starts to harden.  Use hand stick mixer and mix in your essential oils of your choice.  Whip until fluffy.  Place in jars and use as needed.  May melt in high degree temp but at around 70 should stay nice and fluffy.  
Oils I like are lemon balm, lavender, ylang ylang. Approx 10 drops each

Magnesium oil Deodorant

1 T magnesium oil 
2T coconut oil
2T shea butter
3T arrowroot powder
1T redmond Clay 
8 drops tea tree essential oil
8 drops lavender essential oil
8 drops lemon or lemon balm essential oil

Melt coconut oil and shea butter in glass jar placed in water in saucepan and heat until melted.  remove from heat, mix in arrow root and redmond clay. Let cool, then blend in the essential oils (you can use whatever frangrance you want but I do like tea tree and lemon) and magnesium oil.  Pour into little jars and place in the frig to set up then you can remove from frig once set.  Use fingers to scoop out enough to cover armpit area, rub in well.  Should last all day but at first your body may need to detox and adjust so you  may have to use this more often the first week or two.  This is all natural and works great but it is not antiperspirant only deodorant.

Face Cream

1/2 (4oz) cup shea butter
3T Avocado Oil
15 drops lavender Essential oil
10 drops Carrot seed oil
12 Drops Frankincense Essential Oil
2 drops Lemon Balm Essential oil
4 Drops Ylang Ylang Essential oil
12 Drops Helichrysum Essential oil 

Place shea butter in jar and place in saucepan of water on stove on low to medium heat.  Stir frequently  until completely melted, add the avocado oil, stir and place in frig for about 30 minutes or until solid.  Remove from frig and add the essential oils with a hand stick blender and whip until creamy.  Place in containers with lid and done.  I love how this feels on my skin.  You can use it all over if you wish.

Coconut Almond Energy Bites

12 oz (about 2 cups soft type dates or medjool brand, as they are nice and soft, or soak your firm dates in water for about 15 minutes, drain before using)
1 1/2 cups almonds (or blend of other nuts such as pecans, walnuts)
1 cup unsweetened flaked or shredded coconut
1/2 cup cocoa powder
1 Heaping Tablespoons organic coconut oil
1 T vanilla extract
1/2 tsp coconut extract (optional, but gives a more coconut flavor like a mounds bar)
(a tsp or so of water may be needed to blend while processing)

Add dates then all remaining ingredients above the line into food processor.  Pulse a few times and scrape side of bowl.  Blend for about 3 minutes, or until mixture is a large clump.

Use spoon or scoop to measure out about 1 tablespoon and roll into a ball then quickly dip into shredded coconut if you desire, as pictured.
You can also just press this into a square 8x8pan lined with wax paper,  or a large loaf pan, put in the frig for a few hours to harden and then cut into bars.

Store in the refrigerator for up to 2 weeks.  They probably won't last that long as they are so good.


NOTE:  I bought hershey's special dark cocoa powder and it made these even more delicious.  If you don't want as much coconut you can use only 1/2 cup but then use a full 2 cups of almonds.

I also have used less dates and replaced with chia paste and stevia to cut back on sugar.

Oatmeal Energy Bites


1 cup(dry) old fashioned oats
1/2 cup unsweetened coconut flakes
1/2 cup natural peanut butter
1/2 cup ground flax seeds
1/4 cup dark chocolate chips or cacao nibs (optional)
1/3 cup raw honey
1 T chia seeds (optional)
1 tsp Vanilla Extract

Stir all ingredients in medium bowl until mixed well.  Roll balls in the desired size or press into an 8x8 square pan.  Store in refrigerator up to a week.

Healthy Chewy Oatmeal Raisin Cookies
My husband is always after me to make him some cookies.   I decided to alter a few ingredients to make the cookies as whole grain and natural

as possible.  You can't stop with one cookie, but that is ok, they are good for you, well sort of.

1 cup white whole wheat flour (found this white ww flour in our Walmart store) I am now gluten free and I want to eat these I sub out the flour for a gf flour.  
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
mix the dry ingredients, original recipe says to sift together, I just mix with large spoon.

Add
3/4 cup coconut oil, softened enough to mix well not liquid though
1 1/3 cup raw sugar
3 T molasses make sure the spoons are good and full
2 eggs
1 tsp vanilla

Beat all the above with a mixer until smooth about 2 minutes.
Then stir in:
2 1/2 cup old fashioned oats
1 cup raisins

Now drop onto greased cookie sheet in 350 degree oven for about 12-15 minutes until light brown. Cool slightly remove from sheet. They do flatten out so be careful not to get them too close to each other.
